Use the Sous Vide to heat a large pot or Sous Vide container (you can find our favorites Here) until it registers 130 Degrees for medium rare.
Place the meat in a large BPA free freezer bag, or use your favorite vacuum sealer and bag the meat that way. If using a freezer bag, lower the bag into a bowl of water and press out the excess air before sealing.
Add the bag into the pot and cook at 130 for 1-2 hours.
Preheat a cast iron skillet and lightly brush with olive oil or ghee. Take the roast out of the bag and make sure to pat dry with paper towels. Season the meat generously with salt and pepper if desired. Sear until golden brown, roughly 1 minute per side.
Let the steak rest for about 10 minutes, slice it against the grain, and enjoy!
